One of our favorite local places to eat is at the Carniceria in Hudson, CO. In addition to the varieties at the butcher counter and the fresh produce, they sell lunch items like Tacos, Chimichangas, Tortas, etc. I LOVE THEIR TORTA. Also known as a Mexican Sandwich. Our Carniceria tops a telera roll with carne asada, pickled jalapenos, avocado, tomato, lettuce and onion. It’s REALLY good.
Whenever I fall in love with food, I try recreating it in my own kitchen. So, I went to the carniceria and tried to buy the ingredients I needed to make tortas. Ugh. They don’t sell the rolls. DANG IT!
I decided to go hardcore and make them from scratch. Turns out they are super easy to make, and super delicious!
The texture reminds me of a mini French baguette. Fluffy on the inside, crispy on the outside.
But not too crispy! Just the right amount of crispy. Mmmmm….
Okay okay, getting started. I love this recipe because it calls for a small amount of sugar and fat. You can use lard, butter or shortening. I chose to use shortening.
Pour all the ingredients into a stand mixer fitted with the dough hook. (or you can do this part by hand…. NOT FOR ME THANKSSSSSS)
Mix until the dough starts coming together. Then turn your speed up to medium and let it go for a while longer. If you notice the dough sticking to the side of the bowl, add some extra flour. You want it to be soft, but not sticky.
Be prepared to let the dough rise for about an hour, or until doubled in size.
Once your hour is up, turn the dough out onto a floured surface and punch it down a bit. Then separate it into the size you want the rolls to be. The recipe said to roll out 10 balls but I chose to do 8 instead since I wanted bigger rolls like the carniceria serves.
Next, shape them into little footballs.
Then cover them while you begin to preheat the oven. They will actually rise a bit more while the oven preheats.
Once the oven is preheated, brush the dough with an egg wash.
Then score them on the top.
Now you get to bake them!!
I brushed them with butter while they were still hot.
They turned out great! Everyone loved them! And guess what I did with them…
I made TORTAS!!
