I found this cornbread recipe on allears.net. Can you guess why it’s called ‘allears?’ It’s a website that offers A LOT of information on Disney travel and cuisine, hence Mickey’s big ears I assume. I’ve heard Disney has some pretty awesome food so I thought I’d give it a try. I’m pleasantly surprised with how much I like it.
I can admit I was in a cornbread rut but I’m never going back! In the past I would doctor up a $0.50 box of Jiffy. But never again!

There are four kinds of cornbread people:
- People who like actual kernels of corn in their cornbread (not for me thanksss)
- Cornbread haters (my son)
- People who like gritty, savory cornbread (like Jiffy)
- People who like sweet, fluffy, cakey cornbread (like Krusteaz)
This is similar to #4 and it’s REALLY GOOD.
Bonus: It took me less than 10 minutes to get into the oven. 🙂

Only 8 ingredients!
To start –
In a small bowl whisk up the wet ingredients (eggs, oil, milk)
Then, in a large bowl whisk up the dry ingredients (cornmeal, flour, sugar, baking powder, salt)
Now slowly pour the wet mixture into the dry mixture stirring until JUST combined.
I suggest using a spatula to stir it – the whisk didn’t work out very well. 🙂
Pour the mixture into a greased 9×13 pan.
Bake at 375* F for 20-25 minutes or until golden brown. Mine was done right at 20 minutes. 🙂

It has a cake-like texture. Like I said, I was very surprised at how good it is.
Fairly sweet, really fluffy and has a nice crumb.
You know……. I didn’t just make cornbread to make cornbread, right? This is a traditional meal in my home where the cornbread is accompanied by Sausage, Red Beans and Rice.
Magnificent!
The sweetness of the corn bread pairs wonderfully with the savory spice of the main dish. It’s COMFORT FOOD!
