Easy Rotisserie Chicken Salad

I present to you my very easy recipe for chicken salad!  I’ve been making this since Jason and I first got married and it remains a fan favorite in our house.  The original recipe came from Ree Drummond, but I’ve changed pretty much everything except for the mayo/sour cream part.  SO, IT’S MINE NOW.  🙂

What makes it stand out from the rest:  The savory flavor from the rotisserie chicken, the tang from the vinegar, the sweet crunch from the apple and the fresh aroma of garden dill.

My garden is actually named “The Forest of Dill” because I’ve been letting it re-seed itself for the last few years and therefore I have “trees” of dill growing everywhere!  Maybe that’s why they call it “Dill Weed?”  Either way, it’s awesome!

THIS^^^^^^^^^has got to be the most UNDERRATED item at the grocery store.

I probably buy one a week.  Why wouldn’t I?  It’s a precooked, deliciously seasoned, juicy, comes-home-hot-n-ready, whole rotisserie chicken, all for under 7 bucks??  Yes, please!!

A versatile ingredient to use in the kitchen.  It’s great for recipes like chicken chili…….chicken enchiladas…..chicken sandwiches…….chicken pizza……and we eat it right out of the package too.

Enough rambling.

Start by whisking everything together except the chicken and apples to make the……..

To make the sauce.

Then add the chicken.

Then add the sliced apples.  S&P to taste.

That’s it.  You should cover it with Saran Wrap to let the flavors meld in the refrigerator for a while.

But, if you don’t have time or PATIENCE, just eat it by the handfuls out of the bowl like a caveman.  HEY!  Do whatever you want to do, I’m not going to judge you.

Serve it as a sandwich or with stone-ground wheat crackers.  Best paired with kettle chips and fruit.  ^^Owen likes it and I hope you do too! 🙂 ………recipe below:

 

Easy Rotisserie Chicken Salad

  • 1 whole Rotisserie chicken, shredded
  • 1 whole diced Apple
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Milk
  • 1 tablespoon Brown Sugar
  • 2 tablespoons Vinegar
  • 1 tablespoon Fresh Dill Weed
  • (If using dried dill, reduce to 1/2 tablespoon)
  • 2 tablespoons chopped Green Onion
  • A dash or two of Cayenne Pepper
  • Salt to taste
  • 1/4 teaspoon Black Pepper

In a LARGE bowl, whisk together mayo, sour cream, milk, brown sugar, vinegar, dill, green onion, cayenne, salt and pepper.

Shred rotisserie chicken.

Dice one whole apple.

Add the chicken and apple to the wet mixture and stir well!!

Cover and refrigerate for at least 30 minutes, preferably an hour.  That’s it!  Serve as a sandwich or with crackers.  Enjoy 🙂
