Joanna Gaines Tortilla Soup

My best friend Scott (of almost 20 years!!) finally moved back to Colorado from Cozumel, Mexico.  He was there for four years as a scuba instructor at a nice resort.  Needless to say everyone’s glad he’s back.  I had him and my other bestie Jessica over for dinner… it’s been a while since he’s been to our place out in the boonies.

I decided to make Joanna Gaines Tortilla Soup for dinner and Perfect Latin Flan for dessert.  As usual they were both willing and eager to lend a hand.

And after dinner and over conversation we watched American Horror Story.  Pretty ideal evening if you ask me! 😁

In the past I’ve made this recipe using shredded rotisserie chicken but this time I boiled chicken breast since our local market was out of the rotisseries.

Note:

You have to cook Spanish Rice in a separate pot and add it to the soup once it’s done so plan for that extra 20-25 minutes of “rice steaming.”

After the rice was done we put all of the ingredients in a large pot, covered it with chicken broth and simmered it for about 30 minutes.

We garnished it with corn chips, shredded Monterey jack cheese, diced avocado, and lime wedges.

VIOLA!  This soup has AWESOME flavor!  It’s “freshness” makes it appropriate for a Summer night, and it’s warmth makes it appropriate for a Fall night.  It’s hearty enough that you can serve it as a meal.  (According to my husband soup isn’t a meal, however, he ate it for lunch the next day paired with chips/avocados/cheese/lime and he was PRETTY full afterwards!)

If you’re a soup lover definitely give it a try. 🙂

We had Perfect Latin Flan for dessert.  WINNING!! I have a horrible addiction to this flan by the way…

**shrugs chubby shoulders**

oh well.

The recipe makes enough soup that I was able to send Scott home with a Tupperware full and feed my family lunch the next day.  🙂😁😍
