My best friend Scott (of 20 years!!) finally moved back to Colorado from Cozumel, Mexico. He was working there for four years as a scuba instructor at a nice resort. Needless to say everyone’s glad he’s back. I had him and another bestie, Jessica, over for dinner… it’s been a while since they’ve been to our place out in the boonies.
We made Joanna Gaines Tortilla Soup for dinner and I had pre-made Perfect Latin Flan for dessert. I put my friends and my kids to work making this soup with lots of chopping labor!
And after dinner conversation we watched American Horror Story. A pretty good evening if you ask me! 😁

I prefer to use shredded rotisserie chicken but the store was out so I boiled chicken breast instead.

To begin, simmer the veggies and chicken in a large pot of chicken broth.
Towards the end add rice (the boxed kind) and let it cook for 15-20 minutes or until the rice is tender. Then salt to taste one more time.
The recipe calls for a lot of garnishes – cheese, limes, avocado, cilantro, and tortilla chips.
It’s so So good! The fresh ingredients make it appropriate for Summertime and it’s hearty enough that you can serve it as a meal. (According to my husband soup isn’t a meal, but he ate it for lunch the next day and was pretty full afterwards!)
If you’re a soup lover definitely give it a try. 🙂

As far as the rice mix, is the spice packet included with the rice supposed to be added to the broth as well? Otherwise, I think it would be bland. Just wanted to make sure before I make the recipe.
