Perfect Latin Flan

Flan:  You either like it or you don’t.  I’ve never met an in betweener that said “meh… I guess I’ll eat flan IF you insist.”  Love it or hate it. 

I love it and this recipe is A-M-A-Z-I-N-G.

I’ve made this custardy dessert in the past for work pot-lucks but it never turned out this good.  That’s all changing thanks to this amazing recipe from America’s Test Kitchen.

If you’re a flan hater I’m here to convert you.  This recipe is “FLAN-TASTIC!”  hahahahahahah 😀

Only 8 ingredients!

Bake the flan in a water bath by placing a dish towel in a 13×9 baking pan and setting the loaf pan on top.  The towel prevents movement when baking.

You’re going to fill the larger pan with boiling water prior to baking.

Getting started!  The beginning of the caramel sauce.  It’s only sugar and water 🙂

Get it to a nice amber color and then pour it into the loaf pan.

Whisk the eggs really well and then mix everything together in one big bowl!

This recipe is seriously SO simple.

A fine mesh strainer does the trick^^

Strain the custard mix right on top of the caramel sauce.

Cover tightly with foil.  Then you make the water bath and put it into the oven to bake.

Mine took 1 hour and 40 minutes to bake.  I inserted a thermometer into the center to make sure it reached 180* internally before I removed it.

My family had a ‘fiesta night’ to celebrate my grandma being in town.  I learned that flan (and tiramisu) are her favorite desserts!  Nice coincidence.  Love you Grandma Ann!
