It’s PEACH SEASON. You can’t escape it. They’re everywhere… grocery stores, farmer’s markets, my windowsill, your windowsill, Facebook, Pinterest!
Colorado is notorious for thier Palisade Peaches grown every year on the Western Slope. People buy them in boxes! But to every palisade peach lovers defense, they’re DELICIOUS and worth the price. There’s even an annual festival in Palisade, CO… And one in Lafayette, CO.. and in Fort Collins, CO… and….well you get the point.

Let’s take a quick moment to talk about something more important than peaches; Geyser Peak’s Sauvignon Blanc.
It’s my favorite white. Crisp, fruity, not too sweet, and it compliments peaches SO WELL! In 2011 my husband and I visited the Geyser Peak winery in Napa which made me appreciate it that much more. You have to give it a try if you’re into white wine. I use it in this recipe too. 🙂
I’m going to make a very simple Peach Compote. I start by dicing one large peach.
On medium heat I melt one tablespoon of butter and then cook the peaches until they soften up – 5 minutes or so.
Then I add a couple tablespoons of brown sugar.
Then 1/4 teaspoon of Cinnamon. I accidentally dumped a ton of cinnamon into the pan so these babies had some SPICE!
Now a drizzle of honey (maybe 1/2 teaspoon??)…
The important part. I add 1/8 cup of white wine.
I guess I should add a couple tablespoons of water too. *rolls eyes*
If you don’t have wine at home, water will do. 😉
Next, 1/2 teaspoon vanilla extract and a pinch of salt.
Simmer until it’s a syrup like consistency. That’s it! All done!!
I served this over vanilla pudding with Nilla wafers and homemade whipped cream. It’s really great served warm over french toast, waffles, ice cream, oatmeal, etc.
Give it a try since we determined you probably have a peach sitting in your windowsill.
Peach Compote
- 1 large diced very ripe Peach
- 1 tablespoon Butter
- 2 tablespoons Brown Sugar
- 1/4 teaspoon Cinnamon
- 1/2 teaspoon Honey (optional)
- 1/2 teaspoon Vanilla Extract
- 1/8 cup White Wine (or water)
- 2 tablespoons Water
- Pinch of Salt
In a medium size pan over medium heat melt 1 tablespoon of butter. Add diced peaches to the melted butter simmering for about five minutes until soft. Add the brown sugar, cinnamon and honey.
Now mix in the wine, water, vanilla and a pinch of salt. Simmer for a few minutes longer until you get a reduction similar to syrup. Serve warm over French toast, waffles, ice cream, oatmeal, etc. Enjoy! ❤️
