Oven roasted red potatoes seasoned with shallots, herbs, salt, and olive oil have a crispy crust on the outside with a sweet and creamy filling on the inside. They’re a perfect pairing with grilled chicken or steak.

These are on my list of ‘go-to’ side dishes because they only takes a few minutes to pop in the oven and come out perfect every time… they please even the pickiest eaters, including my 4 year old daughter. 🙂

I always taste-test a potato before I remove the pan from the oven.  The cooking times can vary! 🙂

Pair them with grilled chicken or your favorite cut of steak for a simple but great dinner!

“Dinner is often a very celebratory environment, a very safe place, a time to reflect and let the day go and enjoy good food and wine.  It’s a very peaceful moment during the day.  A great dinner can change your day around.”

  • 1 or 2 teaspoons minced Shallot (or Garlic)
