Oven Roasted Red Potatoes

Oven roasted red potatoes seasoned with shallots, herbs, salt, and olive oil have a crispy crust on the outside with a sweet and creamy filling on the inside. They’re a perfect pairing with grilled chicken or steak.

These are on my list of ‘go-to’ side dishes because they only takes a few minutes to pop in the oven and come out perfect every time… they please even the pickiest eaters, including my 4 year old daughter. 🙂

Begin by washing the potatoes and then dice into 1/2″ pieces.

Mince the shallot and depending on your taste preference use anywhere from 1-2 teaspoons.

Toss everything together in a large bowl – and don’t skimp on the amount of dried seasoning/herbs.. make sure to use 2 teaspoons!

Transfer to a baking tray.

Flip the potatoes halfway through the cooking time.

I always taste-test a potato before I remove the pan from the oven.  The cooking times can vary! 🙂

Pair them with grilled chicken or your favorite cut of steak for a simple but great dinner!

Oven Roasted Red Potatoes

  • 5-6 medium Red Potatoes
  • 1 or 2 teaspoons minced Shallot (or Garlic)
  • 2 tablespoons Olive Oil
  • 2 teaspoons Italian Seasoning
  • 3/4 teaspoon Sea Salt

Preheat oven to 400º F.  Wash and dry potatoes.  Dice them into 1/2 inch pieces.  Mince one or two teaspoons of shallots depending on your taste preference.  In a large bowl toss together potatoes, shallots, olive oil, Italian seasoning and salt.  Spread potatoes evenly on a large cooking tray.  Roast for 35-40 minutes flipping half-way through.  Potatoes are done when the exterior is golden brown and crispy.  Feel free to taste-test before removing from the oven – the cooking time can vary!  Enjoy! 🙂

Makes 4-6 side servings.
