Two Egg Omelette with Sausage (low-cal)

I’d like to begin my blog post by presenting the star of the show!

It’s Johnsonville Turkey Sausage Links!!!

I’ve been brainstorming all the ways I can cut calories in my diet and still feel satisfied.  So…  I went on a “turkey buying extravaganza” in lieu of my typical pork and beef.  Sounds crazy, right??  Not really.  I just walked the aisles of my grocery store checking things off a list.  I like checking things off lists, it makes me feel productive.

Anyway, lo and behold I found these sausage links and I can’t even tell you how good they are!!  You’ll just have to try them for yourself!  They taste very similar to pork sausage links with half the calories and LESS than half the fat.  70% less fat according to the package. 😀

This breakfast has 286 calories, is very satisfying, and takes about 10 minutes from start to finish!

It’s a two-egg omelette with sweet peppers, melty cheese, and sausage links!

I try to keep a bag of these little peppers in my fridge.  You know the kind… they come in a cellophane bag from the produce aisle.  They are miniature sweet peppers, similar to Bell Peppers and cost about $3 for a 1 lb. bag.

Begin by slicing three peppers and then sauteing them in a skillet coated with non-stick spray.

Season them however you want to.  I used salt, pepper, and a dash of onion powder.

Next, using the same skillet, bring the temperature up to medium high.  Coat the skillet again with non-stick spray.  Scramble two eggs in a bowl and pour into the hot skillet.

Once it begins cooking around the edges, FLIPPY-FLOPPY it.  If you’ve got mad cooking skills, do it without a spatula!

Now add the peppers and a sprinkling of cheese.

Fold it over and that’s it!!

The sausage is pre-cooked so you simply microwave it for 30 seconds while your omelette is cooking.  And there you have it!  A hearty and filling breakfast that’s under 300 calories. 🙂

 

Two Egg Omelette with Sausage (low-cal)

  • Two large Eggs, whisked
  • 3 mini Sweet Peppers, sliced
  • 1 tablespoon Shredded Cheese
  • 2 Johnsonville Turkey Breakfast Sausage Links

In a small skillet coated with non-stick spray, saute peppers over medium heat until cooked through, seasoning to preference.  Set aside.  In the same skillet over medium-high heat, re-coat it with non-stick spray and pour in two whisked eggs.  Cook for about 2 minutes or until edges start to firm.  Flip it over and cook for an additional minute.  Put the peppers and cheese on the omelette and fold it in half.  Serve with Johnsonville sausage links prepared in the microwave for 30 seconds.  That’s it.

Caloric equation for your reference:

1 Meal = 2 Large Eggs ( 156 cal.), 3 miniature Sweet Peppers (25 cal.), 1 T. Shredded Cheese (25 cal.), 2 Johnsonville Turkey Breakfast Sausage Links (80 cal.) = 286 Calories

*Note:  For a heartier omelette, throw in a third egg for an additional 78 calories. 🙂
